The wine is vinified in large earthenware vats of Georgian origin known as KVEVRI*, using the orange wine method / white grape variety with long contact with the skins.
Fermentation takes place throughout the entire duration in contact with the grape skins at a long maceration and slow fermentation with no added sulphites, yeasts, enzymes or any additives.
Clay is a neutral living and breathing material that allows the wine to develop without stressing it with external aromas not coming from the grapes as is the case with oak and without suffocating it as with steel. Limited batch.
