A focused and full-bodied wine with excellent structure and freshness – long, dry, refreshing, and noble. It is the result of the uncompromising professionalism of Stefan Pirev, winemaker and production director at Bononia Estate.
The grapes come from the estate's own vineyards, located between the villages of Koshava and Gomotartsi. Bononia's vineyards lie within the Danube morphostructural zone, characterized by predominantly flat terrain, where elevation differences between riverbeds and inter-valley ridges do not exceed 100 meters.
The chernozem soils in the vineyard area have formed under forest-steppe conditions on loess, clayey loess, loess-like clays, Pliocene deposits, Sarmatian limestones, and more. These soils are distinguished by their high humus content and synthesis of clay minerals, which contribute to the distinctive terroir expression.
The harvest took place in the first week of November 2024, with perfectly ripened grapes, excellent acidity, and ideal berry firmness.
This premium wine underwent fermentation in state-of-the-art stainless steel tanks, custom-made for Bononia Estate by the renowned Italian company Defranceschi. These tanks allow for precise micro-oxygenation and meticulous vinification of small batches.
The wine was aged for 12 months in new 400- and 500-liter French oak barrels, followed by an additional 12 months of bottle aging.
