Origin: Catalunia, Spain. Careful selection of vineyards in the heart of Catalonia, protected by the Montserrat Mountains, is the key to production at Villa Conci. The aim of our Cava is to present the freshness of wine from the Mediterranean climate. The altitude of the plots is an extreme advantage with the lower temperatures at night contributing to the pleasant acidity of the grapes. Equally important is the use of the Chardonnay grape variety, giving fruit character and elegance to the wine.
Winemaking: harvesting, usually by hand, begins at the end of August and ends at the end of October. The grapes are transported to the winery in 25-30 kg crates or in small steel trailers if the vineyard is close to the winery. Harvesting takes place at night to avoid high daytime temperatures and an undesirable start to fermentation. In the cellar, the grapes are cooled to 10?C, thus preventing colour from entering the must. After pressing, each variety is fermented separately at a constant temperature of 16?C to preserve the characteristic aromas. The base wine is then blended and bottled, to which yeast and sugar are added to form the bubbles. An underground cellar is used for the secondary fermentation at a constant temperature of 15-17?C, where the wine is kept in constant contact with the zips. This sparkling beverage, obtained by de-alcoholising the wine, is aged for a minimum of 12 months in bottle. After this period, the lees are naturally decanted and removed, and the expedition liqueur is added.
Characteristics. Elegant wine with delicate bubbles. Intense fruit aromas and hints of toast on the nose. In the mouth it is juicy, warm, pleasant and rounded with a lingering finish.
Serving Suggestions. It goes very well with all kinds of tapas, salads, risottos, cheeses and light fish dishes. As well as with artichokes and asparagus. The optimal serving temperature is 6-8?C.
