100% Cabernet Sauvignon
Very pale yellow colour, with silver highlights. Intense and elegant, the nose initially reveals floral notes before moving on to hints of red berries and caramel. The mouth is full of freshness, with a rich aromatic intensity. Delicious notes of white fruits dominate. This sparkling wine is full of vitality. A play of fine and delicate bubbles captivate the palate.
Rarity and uniqueness are the key words here. This cuvée took us by surprise: a blanc de noir made from 100% Cabernet Sauvignon. This specificity gives it a remarkable texture and fruitiness. The wine is produced according to the traditional method. The most festive of the Diane wines celebrates with panache all moments of joy and will delight all lovers of fine bubbles.
Direct pressing at low temperature to preserve the freshness of the wine. The first alcoholic fermentation takes place in thermoregulated vats, at temperatures between 16 - 18°C. Secondary fermentation takes place in the bottle, according to the traditional method of Champagne production. This takes place in underground quarries in the Saint-Emilion region, at a constant temperature of around 15°. It is aged on the lees for 9 months.
