Founded in 1815 by Charles Louis Noël Billaud after his return from the Napoleonic Wars, Domaine Billaud-Simon has a long and storied history. He planted vineyards on his family estate, which were later expanded in the 1930s through the marriage of his descendant Jean Billaud to Renée Simon. Nestled behind high walls near the Serein River, the winery is now managed by Jean’s son, Bernard. It is recognized as one of the finest producers in Chablis.
Billaud-Simon's 20 hectares of vineyards in Chablis include holdings in four of the seven Grand Crus: Blanchots, Les Clos, Les Preuses, and Vaudésir, as well as four leading Premier Crus: Fourchaume, Mont de Milieu, Montée de Tonnerre, and Vaillons. The domaine also produces AC Chablis from estate-grown fruit, planted on Kimmeridgian soils—rich in limestone, clay, and marine fossils—surrounding the Premier and Grand Cru vineyards.
The winery is currently undergoing organic conversion for its vineyards.
