100% Dimyat, sweet orange wine
The grape has been grown in Dimitrovche village, hand harvested on 10/10/2012 at optimal ripeness
in small containers. After pick up the grapes are stocked for 18 hours in a refrigerator at 6C.
The grape is sorted and put in the 250l containers with the stems ( hard parts). The alcoholic fermentation starts spontaneously with everyday batonage ( stirring the "hat"). During the fermentation continously has been added concentrated grape juice. The wine has been left with the hard parts until February and then is moved to an old french oak barrique ( 225l). No added SO2).
