In keeping with Quinta de Baixo's tradition of producing traditional zero-dose sparkling wines, the Água Viva Baga.
In 2016 we experienced a dry and mild winter, with large amounts of rainfall recorded in the months of April and May, which required us to intervene strictly in the vineyards. The following months provided high temperatures and allowed the grapes to ripen evenly. Made using the Cuvée method, this sparkling wine was fermented in bottle with indigenous yeasts and left to age on fine lees for 60 months in the cellars of Quinta de Baixo.
It is a white sparkling wine made from a red grape variety known as Baga. The colour shows a very subtle red hue; the mousse is fine and persistent. The delicate but deeply expressive nose offers hints of red fruits such as cherries and blackcurrants, floral aromas, hints of fresh herbs as well as notes of brioche and hazelnuts that give the wine a more serious character. On the palate, the wine impresses with its incredible balance: structure combines with elegance, lightness, finesse and liveliness. It finishes long, with beautiful and long-lasting acidity.
