The grape harvest is from 15-25 September. The variety is characterised by a fine skin which cracks easily in rainy autumn. The condition of the grapes is monitored on a daily basis and the best time for picking is sought. The grapes are hand-picked and hand-picked again before picking.
Fermentation takes place in chrome-nickel vessels. The alcoholic fermentation is followed by malolactic fermentation. The wine is aged for 12 months in French oak barrels.
