In the spirit of global practices and centuries of tradition in established wine regions, Midalidare's "Midalidare Sparkling" project has been launched - producing sparkling wines using a traditional method, with secondary fermentation in bottle, at least 18 months of aging on the lees and attention to every detail. The start was made in 2010 when, after careful study of the terroir, new vines of Pinot Noir and Meunier varieties were planted in stages.
Midalidare Blanc de Noirs is made entirely from organic grapes and aged for at least 48 months on the lees. The wine was launched in November 2024.
The vines have an average age of 8 years. The rows are in an east-west direction, facing north. The formation is double Guillo (vertical shoot positioning), the density is about 5000 plants per hectare. The yield is controlled to about 9-10 tonnes/ha. Production is adjusted once when the shoots reach a height of 15-20 cm, the so-called green pruning. Particular attention is paid to the water balance, which is carefully controlled, especially during the ripening period.
Brilliant, delicate colour and a fine creamy mousse and elegant fruity aroma. Midalidare Blanc de Noirs NV is rounded and firm in the mouth with good freshness and excellent ageing potential.
