100% Cabernet Franc from old vines, aged 28 months in French barrels
The winemaker behind this noble and refined wine is Yovko Yovkov, whose expertise and dedication have shaped its character.
The Cabernet Franc originates from 25-year-old vineyards in the Venets area. The cinnamon forest soils and a climate influenced by the Black Sea—marked by dry springs, dry autumns, and mild, warm winters—provide an ideal environment for this varietal. The grapes were hand-harvested in 10 kg crates between October 15–20, undergoing a meticulous vinification process: Destemming and sorting of grape; berries by hand; Cold maceration in a 5,000 L stainless steel tank; Controlled-temperature alcoholic fermentation with delestage; Extended post-fermentation maceration on skins; Malolactic fermentation in new French oak barrels; Decanting and refilling into barrels.
The wine then matured for 28 months on fine lees in new French oak barriques, followed by a minimum of 24 months of bottle aging.
