Delicate and fine bubbles. Aromas of clementine, pear, white pepper and honeysuckle blossom balanced with fresh acidity and fine mousse. Elderflower and crisp green apple. Small bubbles turn to lace in the mouth.
The organically grown grapes are picked at night to preserve freshness to the fullest. Fermented with wild yeasts. The wine undergoes a second fermentation in the bottle (like Champagne) but is not de-fermented. The fine lees that remain after the second fermentation add richness and roundness to this natural sparkling wine.
NO ADDED SULPHITES!
