Description

Seven consecutive years of working with our best vineyards led to Project 7. A visionary wine, conceived back in 2009 and made from our winery's iconic Cabernet Sauvignon and Cabernet Franc varieties. This project reveals the possibilities of terroir expressed in the perfect balance, concentration and unique elegance of the wine.

Project 7 is a blend of 50% Cabernet Sauvignon and 50% Cabernet Franc.

Yovko Yovkov

The grapes come from two different vineyards. Old Vineyards. The vineyard is located in the vineyard, 1 km from the vineyard, 1 km from the vineyard. Cabernet Franc is from own vineyards, reduced yield. A vineyard located 3 km east of the cellar, the land of the village. Ognen.

The land in the village of Oglén. Ognen is located on the eastern slopes of the Terziyskaya Bair, in the transition to the Karnobatsko polje, at an altitude of 184 to 225 m. The vineyards are situated on south-west facing slopes. The soils are slightly leached cinnamon forest. The area of the village of Lozenets 'Starite Vineyards' has a flat-hilly topography, represented by small hills and interhills. The vineyards are located on poorly defined ridges and adjacent slopes with an altitude of 180 to 205 m. The rocks in the area are volcanic and sedimentary and the soil is sandy loam.

Hand picked, at optimum physiological maturity with good acid balance. Precise sorting of the grapes, pressing, clarification, fermentation with immersion of the fermentation cap, cold and post-fermentation macerations. The wine has not been stabilized and has only undergone coarse filtration.

Ageing: 27 months in new French 225 l barriques. 3 years bottle age.

Minkov Brothers Winery

At 10 or 15 kilometers west of Karnobat, near the Burgas-Sofia road, you can see the Minkov Brothers Wine Cellar rising neatly on a hill surrounded by vineyards. Its architecture pleases the eye at first sight – an elegant retro style balanced out by some modern elements implying the comfort and discreet luxury inside.

The wine cellar is located exactly where the oldest, best vineyards used to be grown in the Karnobat area. It revives the glory of the famous winemakers, the Minkov Brothers, who, in late 19^th century, won Bulgaria the then most prestigious international award from a wine fair. A long time ago, in 1875, devoted to their greatest passion, wine-making, Ivan, Vasil and Nikifor Minkov found a wine cellar in the trade-and-craft center of the town of Karnobat – the Church Quarter. The brothers’ exceptional wines and the Karnobat area wine-making traditions led to great success. The gold medal from the Brussels Wine Fair of 1894 was followed by awards from the elite London Wine Competition and the Plovdiv International Fair. A century later, the restored Minkov Brothers Wine Cellar is again the winner of prestigious international and national awards.

The wine has two museum areas – one is devoted to the wine-making family and features authentic possessions of the Minkov brothers, and the other one tells the millenary history of winemaking in this region.

OGNEN

The territory of the village of Ognen is located on the eastern slopes of the Terziyski Hill, where it meets the Karnobat Plain, at an altitude of 184 to 225 metres. The vineyards face the southwest. The soil is slightly leached, maroon forest soil. After the mild winter and the spring rains, the region enjoys warm sunshine until the late autumn days. These conditions make it possible for the grapes to ripen well and are exceptionally favourable for growing red wine grape varieties. We have chosen Cabernet Sauvignon, Cabernet Franc and Pinot Noir.

DEVETAK

The territory of the village of Devetak is to the southwest of the Hisar Hill, in the eastern parts of the Sliven Plain. The rolling landscape features small hills and hollows. The vineyards are located on the low crests of the hills and their hillsides at an altitude of 180 to 205 metres. Volcanic and sedimentary rocks are combined with sand-and-clay soil. On this unique terrain, the sunrays playfully caress the slopes, shine upon them from all sides and enable us to grow both red and white wine grape varieties. We have selected a palette of traditional and modern varieties, including Syrah, Cabernet Sauvignon, Merlot, Gew?rztraminer, Chardonnay, Viognier, Muscat Petits Grains, and Muscat Ottonel.

TERZIYSKO

The territory of the village of Terziysko is located on the eastern slopes of the Terziyski Hill, where it meets the Karnobat Plain. Low mountains and hills dominate the terrain. The vineyards face the east and the south and are located at an average altitude of 350 metres. The soil is maroon forest soil, with very diverse and rich structure. The rainfall distribution in the year is very favourable for the ripening of the grapes. The higher altitude and cooler climate have proved to be suitable for white wine grape varieties. We have selected Rhine Riesling, Sauvignon Blanc, Viognier, Gew?rztraminer, Chardonnay, Muscat Ottonel and Black Muscat.
