Crafted using the oldest and most natural method for sparkling wines, relying solely on the quality of the grapes. The fruit is hand-harvested in early September and gently pressed. The juice undergoes spontaneous fermentation in stainless steel. It is bottled before fermentation is complete, allowing it to continue in the bottle and produce its fine natural bubbles. Each bottle is disgorged before release to remove the coarse sediment and ensure clarity.
