Wine with PGI (Protected Geographical Indication)
They've long wanted to craft a wine from Pamid, driven by the desire to showcase a traditional yet potent expression of this indigenous variety.
Although Pamid is known as a local grape with low phenolic content, minimal tannins, and limited extractive potential, they believe it can produce a wine of character — one that retains its delicate aromatic profile while being vinified in a way that delivers the length, body, volume, and finish we aim for.
To achieve this specific style, they applied several winemaking techniques:
Harvested at optimal ripeness
Pre-fermentation cold maceration of whole clusters
Open-top fermentation
Post-fermentation maceration of part of the wine with Cabernet Sauvignon skins
Partial aging in Bulgarian white oak barrels
Entirely free-run juice only, with no pressing, no fining, no filtering, and no stabilization
The color is translucent, in the raspberry-red spectrum. The nose is vibrant with notes of sour cherry, raspberry, cherry, and strawberry, layered with subtle rustic undertones. The palate is fresh yet harmonious, with an atypical length for the variety.
